The challenge with Stretch Recipes is often trying to figure out how NOT to have leftovers for too long, but rather, to innovate the ingredients for multiple recipes throughout the week.  Giving you ideas on what to cook in smaller batches so you can eat fresh and new every night.  However, some casseroles are really awesome to try and even though it’ll take you a while to make them on the first night, they genuinely make good leftovers for lunch at work and for inexpensively feeding friends.  Therefore, from time to time, we’ll get on a casserole kick and what better way to kick off rice week than with a minimal ingredient casserole dish.
