When I was younger, the only soup I would eat was Chicken noodle when I was sick and broccoli and cheese from the buffet. I was not a fan at all of soup. A couple years ago, I came across a Sweet Potato soup and fell in love! It’s now officially my favorite soup and the only way to one up it is to add a bit of carrots.
Check out Chowhounds recipe. It’s super easy and while it requires a blender or food processor, it’s worth an old fashioned mashing from you to make a few days worth and carry to work for lunch.
- Unsalted butter
- Yellow onion
- Star anise pods
- Sweet potatoes (Optional – Replace one of the sweet potatoes with 2-3 carrots)
- Low-sodium chicken or vegetable broth
- heavy cream or half-and-half
- Sour cream (optional)
