Quinoa Stir-fry with vegetables and chicken

This recipe from Epicurious is a slam dunk meal.  You’ll be high five-ing yourself before bed time for pulling this one off.  I didn’t do the cilantro because I’m one of those weirdos who can’t eat it.  But nonetheless, in less than 30 minutes you’ll have the confidence to pull it off again and again.

What you’ll need

  • quinoa
  • salt
  • vegetable oil
  • carrot
  • red bell pepper
  • grated ginger
  • garlic
  • red chile
  • snow peas
  • black pepper
  • egg
  • grilled chicken breast
  • scallions
  • cilantro
  • soy sauce
