Usually when I make something with broccoli, it’s simply steamed broccoli with a side of potatoes or rice. However, when cooking for just me, I find a lot of broccoli leftover. Rather than letting the excess broccoli go to waste, I’m totally inspired by this Pepper & Broccoli salad recipe by NDTV to make a salad to enjoy for lunch or even a weekend snack. Hope you are too!
