Stretch your Black Eyed Peas into Breakfast

If you’ve ever had black-eyed peas for breakfast or brunch, you know it’s not as weird as it sounds –  Especially on New Years Day.  These good luck beans are good for you too!

But what’s better than something that’s good for you and tastes amazing.  Feel free to make these with canned black eyed peas or reinvent your leftover black eyed peas.

What you’ll need:

  • Potatoes
  • Eggs
  • Vegetable Oil
  • Black-eyed peas
  • Mushrooms
  • Red Bell Peppers
  • Onion
  • Garlic
  • Cayenne Pepper
  • Cumin
  • Vegetable Broth
  • Cilantro
  • Salt & Pepper

Stretch Tip – Add Jalapeño’s or Jalapeño Cornbread if you want an extra kick to get you going!
